One of the things I’ve come to love about RV travel is the ability to cook my own meals no matter where I am. I usually scramble a couple of eggs with some veggies like bell peppers and onions, then add cooked sausage or bacon. I roll everything up in a tortilla and top it with cheese and salsa. It’s a quick meal that fuels me for the day ahead.
Lunch on the road can sometimes feel rushed, but I’ve found that one-pot pasta dishes are a lifesaver. One of my favorites is a simple garlic and olive oil pasta. I cook the pasta, then sauté garlic in olive oil, adding spinach and cherry tomatoes. I toss the cooked pasta into the mix, season with salt and pepper, and finish it off with some Parmesan. It’s fresh, light, and doesn’t require a lot of cleanup.
For dinner, I love making sheet-pan chicken and vegetables. It’s an easy, no-fuss dish that requires minimal prep and cleanup. I toss chicken thighs, potatoes, carrots, and broccoli with olive oil, garlic, and my favorite seasoning mix, then roast it all in the oven. This meal is hearty, comforting, and perfect for a cozy night in the RV.
Snacks are important too, so I often keep a stash of trail mix on hand. I mix nuts, dried fruit, chocolate chips, and a bit of granola. It’s the perfect on-the-go snack for hikes or scenic drives.
Cooking in an RV doesn’t have to be complicated. With a few simple recipes and ingredients, I’ve learned that it’s easy to enjoy great food while traveling. It’s all about keeping things simple and using what you have to create meals that feel like home.
